This easy and delicious 3-ingredient Japanese dessert cake only takes 5 minutes to make

One of the best things about this recipe is that it’s so simple! You literally need eggs, sugar, and butter and you’re set. If the fridge or freezer is running low, this back-pocket recipe is sure to save the day.

Let’s start with the eggs.

The first thing we need to do is separate the yolks from the whites. Crack the egg into your hand and allow the whites to slip through your fingers if you want an easy hack! After separating, beat the yolks until smooth and move onto the next step.

Using a whisk or hand-mixer, hit those whites!

We are basically making a light meringue here. Whip the egg whites until they are white and fluffy, but don’t overbeat. Scrap the whites into the bowl and add your powdered sugar to the whites. Fold in the sugar without deflating the whites too much. You can be flexible with how much sugar you like here as it’s super forgiving and more of a preference thing.

Spread some butter around a non-stick skillet.

Once melted, make sure it has coated all the edges of the pan. Pour the yolks over the butter and spread them evenly. Your pan should be heated to medium-high because you don’t want to burn the eggs. Using a chopstick or knife, poke some holes in the yolk base to allow heat to spread a bit more evenly.

Now, add the egg whites and sugar mixture to the top!

Using a rubber or silicone spatula, spread the egg whites onto the yolks making an even layer. With the spatula, spread it out into an even layer without large clumps or bumps.

Now, add a lid and let it cook.

Once the egg whites have cooked, transfer the whole thing to a cutting board and let it sit for a second as the egg whites shrink. Once it’s done, you can cut the circle in half and place them one on top of the other, making a little sandwich of egg whites in the middle.

You can top this with anything!
