Ingredients:

  • 6 cups all-purpose flour
  • 3 cups warm water
  • 2 tsp instant yeast
  • 2 tsp salt
  • 2 tsp sugar
  • 2 cup cheddar cheese, fresh grated not bagged
  • 10 strips cooked thick-cut bacon, chopped and divided
  • fresh ground black pepper to taste

Instructions:

  1. In a large mixing bowl combine water, yeast, salt, and sugar. Allow mixture to sit for several minutes.
  2. Add flour, two cups of cheese, bacon, and fresh ground black pepper. Stir with a spoon until combined. Don’t worry if it will look messy since it will all come together once perfectly combined.
  3. Cover with a towel and allow to rise in a warm place for an hour.
  4. After an hour, turn the dough out onto a floured board and knead for a few minutes. It does not need to be completely smooth but knead it long enough to come together. Then divide the dough into two equal halves and place in standard loaf pans.
  5. Time to maximize the flavor. Add the remaining cheese and bacon on top of the loaves before covering it again with a towel. Rest for 30 minutes.
  6. The baking process can be a bit tricky, so follow these instructions very well:
    • Bake the loaves in a 400 F oven for fifteen minutes.
    • Cover loosely with foil and reduce heat to 350 F and continue baking for another 35 minutes.
    • Remove the foil and allow it to bake for another 10 minutes.

And voilà! You now have perfectly baked bacon and cheese bread. But the fun doesn’t end there, we have another variation for this classic which is great for kids!
