Ingredients:
- 6 slices of thick bacon
- 1 pound boneless skinless chicken breasts
- 4 tablespoons of unsalted butter
- 1/4 cup all-purpose flour
- 2 teaspoons garlic powder
- 1/4 to 1 teaspoon cayenne pepper (to taste)
- 1 teaspoon smoked paprika
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 cup Belgian-wheat beer
- 1 cup reduced-sodium chicken broth
- 2 cups half and half
- 8 ounces shredded mild cheddar
- 1 teaspoon Worcestershire sauce
- chives (optional)
- croutons (optional)
- extra bacon (highly recommended)
Step 1:
Begin warming up a large pot setting it to medium heat. Grab a pair of kitchen scissors and start cutting the bacon into the heating pot. You want to cook the bacon until it’s crisp and stir it occasionally. While the bacon is cooking you’ll want to cut your chicken breasts into smaller chunks.

Step 2:
After the bacon is cooked and crispy use a spatula or slotted spoon to take out the bacon and place it into a bowl. Then you’ll want to put your cut chicken chucks into the same pot and have that cook in the bacon grease. While the chicken is cooking pour your 1/2 teaspoon of salt in and cook the chicken all the way through.

Step 3:
Once the chicken is cooked you’ll scoop it out with a spatula or slotted spoon to join the bacon. Then you’ll put your 4 tablespoons of butter into the same pot to melt. You’ll whisk in the flour and all of the other seasonings while continuing to stir frequently for 1 minute.
Season It Up
Step 4:
Now it’s time to pour in the beer and then you’ll continue to whisk for another 2 minutes. Then you’ll add the chicken stock and half and half. Whisk everything well and turn the heat down to medium-low. Slowly add cheddar little by little and keep whisking it all together.

Step 5:
Once you keep stirring everything together you’ll want to make sure it has a smooth and creamy texture. Lastly, you’ll add the Worcestershire and the cooked bacon and chicken into the pot. Let everything simmer together for a few minutes and dinner is served! Garnish with chives, croutons, or bacon bits. You really can’t go wrong with this simple and scrumptious recipe.
