Best-ever cheesy taco crockpot casserole recipe
As many of us have more free time at home than ever before, we don’t need an excuse to try out all the delicious recipes we can get our hands on. If you own a slow cooker, this crockpot taco hash brown casserole is the next recipe to add to your “to try” list.
Cheese lovers will only need to look at pictures of the taco hash brown casserole in all its glory for their mouths to start watering. Combining hash browns – aka. the ultimate potato – garlic, ground beef, cheddar cheese, and taco seasoning, it’s the perfect combination of carby, gooey, flavorful goodness.
You’re going to need approximately four hours to cook your casserole to perfection. Luckily, if you own a crock pot, it really as simple as dumping your ingredients, closing the lid, and leaving it to do its thing.
You only need a few basic ingredients to whip up this delicious Mexican-inspired treat, so what are you waiting for? Don your apron, switch on your slow cooker and get cooking!
First up, head to the shops (being mindful of social distancing) and grab the necessary ingredients. This recipe serves 6 people, so if your family isn’t that big, you can always freeze a few batches, or halve the ingredients listed.
You will need:
- 1 lb ground beef of your choice
- 2 cloves garlic, finely chopped or minced
- A 1 oz packet taco seasoning
- 10.5 oz tinned cheddar cheese soup
- 30 oz hashbrowns, cut or shredded into smaller pieces
- 2 cups taco style cheese, grated
Set your ingredients out on your kitchen counter, then grab all the equipment for the job: your slow cooker, a wooden spatula, a frying pan, a large bowl, and some oil.
Cooking instructions:
1. Brown your ground beef with garlic
Heat up your pan on medium with a splash of oil and add the ground beef and garlic. Chop the beef with a wooden spatula and mix well. When the meat is fully browned, take it off the heat and drain the oil.
2. Mix your ingredients
Take your large bowl and mix your ingredients together. Leave aside 1 cup of grated cheese, which you’ll add later.
3. Add to your crockpot
Lightly grease your crockpot with butter or oil, then pour your ingredients straight in.
4. Top with cheese
Sprinkle the remaining cup of cheese over your ingredients, making sure to cover the surface with an even layer.
5. Cover and cook
Put your heat on low, then cover with a lid and leave for around 4 to 5 hours for the magic to happen. If you’re short on time, you can cook on high for roughly 2.5 hours, but the flavor won’t quite be as nice.
6. Brown your cheese
If your crockpot is oven-safe, you might want to place in your broiler on high heat to brown your cheese. 90 seconds should do it.
7. Serve and enjoy!
