Cherry pie bubble-up casserole is the perfect cheap and easy dessert to please a crowd

When it’s safe to gather in groups again, there’s no doubt hosts will be on the lookout for the perfect desserts – and we just happen to have a quick, easy, and cheap recipe that’s sure to please your guests without breaking the bank.
Even better, the Cherry Pie Bubble-Up Casserole can feed 12-15 people (or fewer dessert lovers) with minimal prep time and just 30 minutes of cook time.
Here’s what you’ll need to do to get some summertime sweetness any time of year:
First, gather the following ingredients:
- 2 cans of refrigerated ready-to-bake biscuits
- 1 21oz. can of cherry pie filling (you’ll need a 21oz can, but you can also make your own filling when cherries are in season with the instructions below)
- 1/2 cup of powdered sugar
- 1 tbsp. of milk
That’s right, if you’re using store-bought items, you only need 4 ingredients!
Now, if you want to make your own pie filling when it’s summertime and the cherries are ripe, you need just four more things:
- 4 cups of pitted tart red cherries
- 1 and 1/2 cups of water
- 1 cup of white sugar
- 1/4 cup of cornstarch
(Note: Canned filling does contain food coloring. If you want your homemade syrupy cherry filling to look the same, you’ll need 2-3 drops of red food coloring.)
Once you’ve decided which filling you’re going to use, you’re just a few steps away from the perfect dessert.
Here’s what you need to do:
First, preheat your oven to 350 degrees.
Step 1. If you’re using canned pie filling, skip to Step 4. If you’re going the homemade route, pit your cherries.
Step 2. In a large saucepan, combine the sugar and cornstarch. Then, add the cherries and water and bring to a boil.
Step 3: Stir your simmering mixture for two minutes or until it begins to thicken. Then, remove the pan from the heat and add your food coloring, if desired.
Step 4. Now, take your tubes of ready-to-bake biscuits and cut each one into 4 pieces, placing them into a casserole dish.
Step 5. Pour your cherry pie filling over the top of the biscuits.
Step 6. Mix the cut-up dough and cherry filling together until the biscuit pieces are thoroughly covered in the cherry mixture.
Step 7. Now place your casserole dish in the oven and bake it at 350 degrees for 25 to 30 minutes. If the top starts to look too brown before the mixture is bubbling, cover the top with foil while it continues baking.
Step 8. For an extra bit of sweetness, this recipe includes a simple glaze. To start, mix 1/2 cup of powdered sugar with 1 tablespoon of milk until thoroughly combined and no longer lumpy.
Step 9. Then simply drizzle your glaze on top of the warm casserole when it comes out of the oven.
Step 10. And that’s it! Now you’re ready to scoop out a serving and enjoy, adding ice cream or whipped cream if you’re feeling extra decadent!
