This Chinese cashew & chicken recipe is the latest slow cooker craze

There are endless possibilities for cooking delicious meals with basic ingredients that exist in almost every kitchen. Introduce a slow cooker into the mix and you can unlock some truly amazing combinations that require little more than mixing, waiting, and serving.

This is one such recipe that has gone viral in recent weeks, with thousands of likes, comments, and over 30k shares! Thanks to clever cooks behind the Slow Cooker Recipe & Tips Facebook page, we can all try this at home and share our thoughts.

This dinner is mostly made up of chicken pieces, flour, garlic, ginger, cashews, brown sugar, and a mixture of common sauces.

You can also add veggies like carrots, broccoli, and green beans like this person!

Slow cooker fans agree it’s one of their all-time favorites.

“This is better than most Chinese takeout cashew chicken,” a post on the Facebook page said.

The full list of ingredients you’ll want to pull this off:

  • 2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders
  • 1/4 cup all-purpose flour
  • 1/2 tsp black pepper
  • 1 garlic clove, minced
  • 1/2 tsp grated fresh ginger 1/4 tsp red pepper flakes
  • 1/2 cup cashews
  • 1 Tbsp canola oil
  • 1/4 cup soy sauce
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp ketchup
  • 1 Tbsp brown sugar

Now you’re ready to begin

The first and arguably most difficult step is to prepare the chicken.

It’s still super simple though! Place an oiled skillet on the stove on medium-high heat and let it heat up while you combine the flour, pepper, and chicken pieces in a ziplock bag. Gently shake the bag until everything is mixed and the chicken appears evenly coated.

Toss the chicken bits into the hot, oiled pan and let them become golden-brown. It should only take about 2 minutes on each side!

Time for the easy part

Once you’re done with the chicken, which probably smells irresistible, put them at the base of your slow cooker.

In a small bowl on the side, mix up the soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes until smooth. Pour that delicious mixture over the chicken and set the slow cooker to low.

Give it 3 to 4 hours with the lid on. Pick up a book, do some evening yoga, or do whatever else you enjoy to build up an appetite.

In the meantime…

While the slow cooker is going be sure to portion out the ½ cup of cashews. Additionally, this meal is excellent over rice, so 30 minutes to an hour before the slow cooker is done would be a great time to prepare your favorite rice!

If you know you’ll like the sauce, it’s a great idea to double the sauce part of the recipe to have some extra to pour over the finished dish so it soaks into the cashews and rice. Some nice, sauced up rice is surely welcome after gobbling up the main toppings!
