Forgot to defrost your meat? This shredded chicken dish is an easy and mouthwatering solution

Did you forget to thaw your chicken? No need to worry about that!

When we’re in a hurry to prepare a meal, we forget to factor in the time to thaw our meat.

So we decide to have food delivered instead of cooking because time is ticking.

It is important to thaw or unfreeze chicken and any meat.

While the USDA said it is okay not to thaw chicken, this still poses a danger regarding food safety.

Cooking frozen meat would mean that it would take longer or need a higher temperature to cook it in time.

However, doing so would increase the chance of bacteria forming in your meat due to increased exposure to high temperatures.

So if you have frozen chicken breasts but no time to thaw, this recipe is your solution.

This recipe uses frozen chicken breast, but you have to shred the meat instead of slicing or cooking it right away.

That way, the thin chicken meat strips would cook quickly and evenly without sacrificing health and safety.

Ingredients:

  • 1 chicken breast (frozen)
  • 1 shallot
  • 2 potatoes
  • 1 egg
  • salt for seasoning
  • black pepper for seasoning
  • 1/2 tsp. oregano
  • 7 oz. mozzarella cheese
  • 2 tbsp. olive oil
  • 1 tbsp. butter (optional)
  • parsley (optional)

Instructions:

Get a shredder because it would be your best weapon for this recipe!

Shred your frozen chicken using a grater, then place all shredded meat into a bowl.

Dice up the shallot and toss it into the bowl with the chicken.

Next, shred the potatoes and make sure you squeeze the excess water.

Doing so would make your mixture less soggy or runny and starchy. Once done, put them in the bowl.

Crack an egg, and add salt and pepper to season your mixture. Chop your oregano finely, and toss it in the bowl.

Shred your mozzarella cheese and add to the bowl.

You can add more cheese if you want to.

Just keep in mind how it will affect the flavor of your entire dish. You can even add other cheeses!

Mix everything in the bowl using a spatula or even your hands.

Use a wide round pan on low heat. Drizzle olive oil into the pan. You can melt and add butter if you like.

Pour the mixture into the pan.

Pat it down to spread it all over the pan. Cover the pan with a lid and cook for 15-17 minutes.

Once that’s done, use a plate to flip and cook the other side. Give it another 15 minutes, so it cooks evenly.

While waiting, you can chop some parsley for later when you serve your dish.

Take the pan off the heat after the allotted time and transfer it to a round plate. Garnish with parsley, slice, and serve.
