Best of all, this brownie recipe requires no butter and you can make it using only one bowl.

This easy-to-make lemon brownie recipe tastes amazing and also has a great texture, which will make them one of your favorites. From the YouTube channel of Jenny Jones, “Jenny Can Cook,” these brownies require no butter and little effort. In fact, you don’t even need a mixer.

So, how exactly do you make this sweet and tart treat for yourself and anyone else in your household? Start by getting your ingredients together.

Ingredients for brownies

To make this recipe you need the following ingredients:

  • 1 cup of all-purpose flour (white or wheat pastry)
  • ¾ cups of sugar
  • ¼ teaspoon of salt
  • ¼ teaspoon of baking soda
  • 2 eggs
  • ¼ cup of plain Greek yogurt (2% fat)
  • Alternatively, you can use a ¼ of sour cream instead of plain Greek yogurt
  • 3 tablespoons of vegetable oil
  • Zest of 2 lemons

Ingredients for the glaze

For the glaze that goes on top of the brownies, you need the following ingredients:

  • 1 heaping cup of powdered sugar, also called confectioner’s sugar
  • Zest of 1 large lemon
  • Juice of 1 large lemon

Instructions for making lemon brownies

Step 1: Start by preheating your oven to 350 degrees Fahrenheit. While you wait for the oven to heat up, line an 8 x 8-inch cake pan with aluminum foil. Leave about 2 to 3 inches of aluminum foil sticking above the sides of the pan.

Step 2: Zest your lemons while you wait. You can either use a zester or a standard box grater. Make sure to use the side with the tiny holes to zest the lemon.

Step 3: Add all of the ingredients together in a medium-sized mixing bowl, or a large bowl for a double batch. After adding the ingredients into the bowl, slice a lemon and add it to the bowl, making sure to remove the seeds before you move on to the next step.

Step 4: Mix everything using a spatula, making sure to mix it thoroughly for 30 seconds, or until the batter is smooth. Pour the batter into the pan, making sure to push it into the corners, and place it into the oven. Bake the brownies in the oven for 20 minutes.

Step 5: While you wait, make the glaze. Start by pouring the glaze ingredients into a bowl and mix. Keep stirring until the powdered sugar is completely mixed with the lemon juice, making sure to add the remaining zest and stirring it in.

Step 6: Once the brownies are ready, allow them to cool for 10 minutes. To remove, pull on the foil and move the brownies from the foil onto a piece of wax or parchment paper.

Step 7: Drizzle the lemon glaze onto the top of the brownies and spread it over the top of the brownies.
