Don't whisk your eggs before scrambling – Gordon Ramsay shares his 'perfect' scrambled egg recipe
Breakfast isn’t complete without eggs on the plate. There are people who like it boiled, or cooked sunny-side-up, as an omelet, or poached.
And then there are some people who prefer it scrambled, side by side with a piece of toast, baked beans, roasted mushrooms, and sausages.
According to a study done for the British Egg Industry Council by Mindlab International, how we eat our eggs can reveal a lot about our personalities.
The study revealed that female extroverts love poached eggs. She’s outgoing, loves decorative clothing, upbeat and lively music and generally happier than most people.
Those who prefer boiled eggs tend to be careless and impulsive.
Sunny-side-up or fried eggs are the preference of young men belonging to the skilled working class. They’re also more open to new experiences, and they are creative, curious and imaginative.
The people who like it omelet-style usually have clean homes because they tend to be more reliable and well organized.
People who like scrambled eggs are more guarded, less open, with managerial jobs. They also live child-less lives.
Do you believe this is true?
One thing is true, the process of cooking the perfect scrambled eggs is a very delicate art. If you make just one mistake, it can come out dry. Dry scrambled eggs can be rescued by adding condiments to make it taste better, though.
But if they come out rubbery, raw, and basically inedible, there’s no saving that dish. It’s best to just start all over again.
How do we make the perfect scrambled eggs?
Chef Gordon Ramsay shared how he cooks the perfect scrambled eggs.
“After training in London, I wanted to become French so I went to the birthplace of all cuisine. I remember seeing this amazing dish with scrambled eggs and sea urchin [and] tasted the sea urchin through the scrambled eggs… it was wild… The texture was just incredible. It made it so much creamier. What was more accessible to the average person at home making scrambled eggs — I knew that was crème fraîche. I perfected that craft in France making scrambled eggs to order,” Chef Ramsay shared.
It’s easy enough to cook when you watch Chef Ramsay’s YouTube tutorial but it’s also easy to ruin.
With Chef Ramsay’s recipe, he always starts with cold eggs in a pot off the stove with butter. Then he’ll put the pan on the stove over high heat.
He always mixes, not whisks, with a rubber spatula. He also makes sure to scrape the bottom of the pan so every bit of the egg is cooked evenly.
What makes Chef Ramsay’s scrambled eggs cooking technique different from the usual?
He always avoids overcooking by removing it from the heat every so often while still mixing. This method slows down the cooking process for the eggs and thus prevents overcooking.
How does he know when the eggs have been overcooked? When he sees the eggs all watery.
When does he season the eggs? At the last minute.
“If we season the eggs [too early], they’ll go gray,” Chef Ramsay shared with the contestants during a MasterChef US episode.
After seasoning the eggs, he’ll add a teaspoon of crème fraîche and mix it in so every element is incorporated with the eggs.
The whole process of cooking the eggs takes three minutes so we cannot take our attention away from it for even a second.
Because one second is all it takes to ruin the entire dish.
“I think there are about 15 million people online who have [watched] the scrambled eggs video. And it transforms the way you eat eggs. Incredible. It’s a kind of rich, sumptuous way to eat scrambled eggs even for dinner, even with all the steps. It’s just delicious on sourdough bread,” Chef Ramsay shared about his YouTube tutorial video.
