This classic hamburger and potato soup recipe is exactly what you need this fall
Everyone knows that beef and potatoes go incredibly well together. This hamburger and potato soup recipe will give you a whole new appreciation of the ingredients.
It looks like we’ll be spending a lot of time indoors this fall/winter. Of course, this time around we know what we’re facing.
During the spring, lots of us spent lockdown cooking up new recipes. Well, if you’ve never made hamburger and potato soup, now’s the time to try and perfect it!
There are many ways to make hamburger and potato soup, but this recipe may well be the best. Make it for yourself to see if you agree!
Ingredients for six servings:
One pound of ground beef.
Four large potatoes.
Four large carrots.
One medium/large onion.
One stalk of celery.
Four cloves of garlic.
One cup of spinach.
One can of corn.
Two tablespoons of parsley.
One tablespoon of basil.
Two tablespoons of beef bouillon base.
Salt.
Pepper.
And of course, water.
Begin by chopping the potatoes, carrots, onion and celery. Most people like to make the potatoes and carrots chunky, and the celery and onion thin. But each to their own.
And the same goes for peeling the potatoes. If you like the skin, why not leave it on? If not, no judgment here.
Dice the garlic.
Then add all the chopped vegetables to a large stockpot, along with the garlic, beef bouillon, salt and pepper.
Fill the stockpot with water until all the vegetables are covered.
Boil the water. Once it boils, keep it on a rolling boil for 15 to 20 minutes. Then use a fork to check that your vegetables are soft enough. (If you cut them larger, they’ll take longer to soften.)
Then take the stockpot off the heat.
After that, crumble the raw beef into the soup in small amounts to avoid splashes.
While you’re adding the beef, make sure to stir it all to stop the beef from sticking together.
Once you’ve added all the beef, add the spinach, corn and spices. Stir it all so it’s mixed.
Put the stockpot back on the heat.
Boil up the soup once more, and then bring it to a simmer. Keep it simmering until the beef is cooked through. This will take 15 to 20 minutes.
And then it’s ready!
You can also make this in a slow cooker.
To do this, just add all of the ingredients at once, except for the spinach. Then you cook it all on low for six to eight hours, or on high for two to three hours. 20 minutes before it’s done, add the spinach.
This is a super simple, yet super satisfying meal! Of course, you may want to have some bread with it. So why not make garlic bread?
To make garlic bread, get a baguette (French bread,) four tablespoons of melted butter, three cloves of garlic, one tablespoon of parsley, two tablespoons of grated parmesan cheese and salt.
Begin preparing the bread by preheating the oven at 400 degrees Fahrenheit.
Grate the garlic.
Then make slices down the bread.
Melt the butter and mix in the parsley and garlic. Brush the butter into the slices in the bread and sprinkle salt in after.
Wrap the loaf in foil. Bake the bread for eight minutes.
Take the bread out of the oven. Separate the slices and sprinkle the cheese onto them. Then broil the slices for a couple of minutes, and you’re done!
