Flourless Peanut Butter Cookie Ingredients:
- 1/2 cup Truvia (sugar substitute)
- 1 cup creamy peanut butter (ideally sugar-free)
- 1 egg
Kitchen Supplies:
- Measuring cups
- Large mixing bowl
- Non-stick cookie sheet
- Small cup of water
- Spoon and fork
Method:
1. Heat the oven to 350 degrees.
2. In the mixing bowl combine the truvia and the peanut butter. Stir to combine.
3. Beat in the egg with a fork and ensure all the ingredients are incorporated, forming a batter.
4. Using a spoon, scoop out enough batter to make a 1″ ball. Roll the dough between your hands, forming the ball, and space the cookies 2″ apart on the cookie sheet.
5. Grab a fork and dip it into the cup of water so the dough doesn’t stick to it. Gently press the fork into a dough ball both horizontally and vertically, making a cross-hatch pattern. Repeat, dipping the fork in the water between each cookie, until all have been scored.
6. Put the cookies in the oven and bake them for eight minutes.
7. Let the cookies cool completely before enjoying them to avoid them breaking apart.
And voila! Flourless peanut butter cookies in minutes!
