What makes a better comfort food, especially during winter, than a hot pot roast that doesn’t even require a dozen bowls and different pots and doesn’t need you to be in the kitchen for like two hours?
Indeed, it’s this slow cooker pot roast that needs just less than half an hour of your time to prepare and it gives you the best roast you can imagine.
Not only will your taste buds and stomach thank you after trying it, but your neighbors will be knocking on your door asking what goodie you’re preparing since it will make your house smell so good.

The recipe, which was shared on YouTube by Claudia from Cooking With Claudia, can be followed even by those who rarely cook, and the ingredients are easy to find, so let’s get started.
You will need:
- 5 to 6 lbs beef chuck roast
- Salt and pepper to your taste
- 2 teaspoons oregano
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 tablespoons olive oil to saute veggies
- 1 large onion, cut up
- 3 stalks of celery
- 4 large carrots, cut up
- 6 cloves of garlic, minced
- salt and pepper to season veggies
- 2 to 3 tablespoons oil to sear meat
- 2 tablespoons butter
- 3 tablespoons flour
- 1/2 cup red wine, or chicken broth
- 2 cups chicken broth
- 2 tablespoons Worcestershire sauce
- 5 tablespoons tomato paste
- 4 tablespoons brown sugar
- 3 bay leaves
- fresh thyme
- 4 to 5 sprigs of rosemary
Now, let’s get to the actual making of this dish.
First, you’ll need to season the meat with salt, pepper, oregano, cumin, chili powder, onion powder, and garlic powder.
Keep in mind that the chunks of meat are very large, so they’ll need to be seasoned very well in order to come out flavorful.
Set the meat aside while sauteing the vegetables.
In a cast iron pan, add the olive oil and all the vegetables except for the garlic on medium-high heat.
Make sure you let them cook for a couple of minutes to make sure their flavor comes out.
Then, add the garlic and saute for another thirty seconds to make sure all the flavor is there.
Put the veggies in the slow cooker so that they work as a “bed” for your meat to sit in and absorb all the flavors while cooking.
Next, move on to searing the meat on medium-high heat for three minutes on each side. Then add them to the slow cooker along with the vegetables.
Finally, work on the sauce.
Use the same pan you used for the meat and add in the butter, then once it’s melted, add the flour. This will thicken the sauce a little.
Pour in the wine or some extra broth, and then add in the two cups of chicken broth.
Add in the Worcestershire sauce, tomato paste, and brown sugar, and let it cook until it thickens a little.
Add the sauce to the slow cooker, and top with the herbs.
Cook for 8-10 hours, and make sure to remove the herbs before serving.
