Millions are making this viral “egg in a pan” stove-top cake

Tired of resorting to banana bread for your quarantine snack? Well, this banana cake will reinvigorate your tastebuds. In fact, over the last 4-and-a-half months, over 5 million people have watched the YouTube video to learn how to make this unique stovetop cake.

While the technique is unique, it’s certainly not difficult by any means. You just need to take your time with it and read over the entire recipe before you start (you know, just like anything you’re about to make for the first time).

The good news is it should only take about 30 minutes!

Here’s what you’ll need to get started:

Ingredients:

  • 1 egg
  • 2 bananas
  • 2 tbsp of brown sugar
  • 1/2 cup of milk
  • 5 tbsp of white sugar
  • 3 tbsp of vegetable oil
  • 1 tbsp olive oil
  • 1 teaspoon of vanilla extract
  • 1 cup of flour
  • 2 tsp of baking powder
  • 1 tbsp vinegar

Now, let’s figure out how to turn these 10 ingredients into a cake.

Instructions:

1. First, you’ll peel your two bananas and slice them into 1/2 inch pieces.

For any baking, you’ll want to use ripe bananas so you get that rich taste and sweetness.

2. Next, pour your oil into a non-stick pan and brush it around to make sure you coat the bottom and the sides.

Heat the pan on low and be sure to use a pan that will accommodate a roughly 12-inch cake.

3. Sprinkle 2 tablespoons of brown sugar into the pan, making sure to cover the bottom evenly.

4. Place your banana slices around the pan in a single layer.

5. Crack one egg into a bowl.

6. Add your 5 tablespoons of sugar and teaspoon of vanilla extract and then whisk the ingredients together until smooth.

You don’t want to see any clumps in there.

7. Next, you’re going to pour 1/2 cup of milk into the sugar mixture. (And you can use any kind of milk you want for this recipe, even plant-based.)

8. Add 3 tablespoons of vegetable oil and a tablespoon of vinegar to the same bowl.

9. Then, fold 1 and 1/4 cups of flour and 2 teaspoons of baking powder into the sugar mixture. It will be easier to get a smooth consistency if you sift them into the bowl, fold the dry ingredients in, and then use a whisk to finish mixing.

10. Once you’ve achieved the right texture, pour the mixture over the bananas in your pan.

Do this step slowly and make sure all of the banana pieces are covered evenly.

11. Cook the cake for 30 minutes over low heat. Be sure to cover the pan so the mixture cooks evenly and from the top as well as the bottom.

12. Now comes the only tricky part. You’re going to flip the cake.

You can do this by taking a plate a bit larger than the cake itself, putting it over the pan, and carefully flipping it upside down. After that, you’ll slide the cake back in with the top now on the bottom and cook it for another 4 minutes.

Finishing it off

Now that your cake is done, it should slide out of the pan and onto a serving plate.

The last step is optional, but if you like your treats extra-sweet, you can sprinkle it with powdered sugar.

Make sure you allow the cake to cool down completely before cutting into it.

Experimenting with the recipe

While bananas work best for this recipe, there’s no reason you can’t try other fruits like thinly sliced apples, peaches, or even pineapples.
