Elote ramen is the quick and easy dinner that everyone needs to try

We’re all familiar with instant ramen. Love it or hate it, it’s ridiculously easy to make, and there are plenty of ways to creatively use it with a variety of ingredients.

There are many different dishes you can produce out of instant ramen, but one of the most interesting we’ve found is elote ramen, as featured on Foodbeast.

This quick and comforting ramen dish is made from combining instant noodles with canned corn, cheese, milk, squeeze of lime juice, tajin, and hot sauce. This is ramen like you’ve never had it before – with a fiery Mexican kick.

If you’ve never heard of elote, it’s essentially just a fancy name for Mexican street corn. It’s made from corn in the cob, obviously, which is grilled then lathered in a creamy cheesy mix.

Elote is a far more interesting alternative to standard butter-grilled corn on the cob. There’s a creamy base made out of the cheese and the milk, but to stop it from being too sickly, you add the likes of chili powder and paprika.

In this ramen recipe, the popular elote ingredients have been combined and added to the instant ramen. You won’t find any whole cobs of corn in the mix, but you will find plenty of canned sweetcorn.

Here’s how to make the recipe for yourself.

You will need:

  • 2 cubes of butter
  • Mozzarella cheese
  • 1/4 cup of milk
  • 1 can of corn
  • 1 serving instant noodles (such as cup noodles)
  • 2 scoops of mayonnaise
  • 1 squeeze lime juice
  • Hot sauce to taste
  • Sprinkling Parmesan cheese
  • Tajin to taste

Method:

1. Melt butter in a pan

Take a frying pan and put it over your stove on a medium heat. Add your 2 cubes of butter and let it melt, then add handfuls of mozzarella cheese bit-by-bit to your taste.

2. Add the milk

Slowly pour in your milk to thin out the mixture and combine. Stir with a spoon.

3. Stir in the corn

Add the full can of corn and mix everything together once again. Then take off the heat and set the pan aside.

4. Make your noodles

Take your instant noodles and make them as you usually would. Then drain them and add them to a bowl.

5. Add your flavorings

Add a couple of heaped tablespoons of mayonnaise, a squeeze of lime juice and hot sauce to your taste (depending how spicy you like it!).

6. Get mixing

Mix your noodles and flavorings with a fork until they are fully combined.

7. Top with cheesy corn sauce

Pour your cheesy corn sauce directly on top of your noodle mix.

8. Sprinkle on additional toppings

Add a sprinkling of Parmesan cheese to the top of your dish, plus tajin to your taste. Again, this depends on how spicy you like your overall dish.

And that’s all there is to it! The whole recipe takes less than 10 minutes to make, and you only need a few basic ingredients that you probably already have in your pantry.
